For the Ribs:
1.2 kg pork ribs (baby back or spare ribs)
1 tsp salt
1 tsp black pepper
1 tsp smoked paprika
1 tsp garlic powder
1 tbsp olive oil
For the Homemade BBQ Sauce:
150 g ketchup π
2 tbsp honey (or brown sugar)
1 tbsp mustard
2 tbsp cider vinegar
1 tbsp Worcestershire sauce
1 tsp soy sauce
1 garlic clove, minced
ΒΌ tsp sweet paprika
1 pinch chili flakes (optional) πΆοΈ
For the Side Dish:
2 ears of corn, husked π½
Fresh cilantro or parsley, chopped πΏ
Butter (optional, for corn)

π₯ Step-by-Step BBQ Prep
1οΈβ£ Make the BBQ Sauce
π― In a small saucepan, combine all sauce ingredients. Simmer over low heat for 10 minutes, stirring occasionally, until thickened. Set aside.
2οΈβ£ Prep the Ribs
πͺ Remove the thin membrane from the bone side of the ribs for tender results.
π§ Rub ribs with salt, pepper, smoked paprika, garlic powder, and olive oil.
π§΄ Lightly coat with a layer of BBQ sauce.
3οΈβ£ Slow-Cook on the BBQ (Indirect Heat)
π₯ Preheat grill to 140β150Β°C (285β300Β°F) using indirect heat (coals on one side, ribs on the other).
π¦ Place ribs bone-side down on the cooler side of the grill. Close the lid.
β±οΈ Cook for 1 hour 15 minutesβ1 hour 30 minutes, basting with sauce every 20 minutes.
