Refried beans (optional) 1 cup
Shredded cheddar or cheese blend 1½ cups
Large flour tortillas (10-inch) 6

1. Prepare the Filling
Heat a skillet over medium heat.
Brown the ground beef, breaking it apart as it cooks. Drain excess fat.
Add onion and garlic; sauté until softened (about 2 minutes).
Stir in chili powder, cumin, paprika, salt, and pepper.
Mix in green chilies and refried beans (if using). Cook until well combined.
Remove from heat and let cool slightly.
2. Assemble the Chimichangas
Warm tortillas to make them pliable.
Spoon 2–3 tablespoons of beef mixture into the center of each tortilla.
Top generously with shredded cheese.
Fold in the sides and roll tightly like a burrito.
