Fill each shell with taco meat and a small spoonful of cream cheese or ricotta. Top with shredded cheese.
The cream cheese melts into the taco meat and creates that creamy Tex-Mex restaurant-style filling most recipes never quite achieve. It also keeps the filling from drying out in the air fryer.
Air fry
Preheat the air fryer to 350°F (180°C).
Place the stuffed shells in a parchment-lined basket or small air fryer-safe dish. Air fry for 8–10 minutes until the cheese is melted and the pasta edges start turning golden and slightly crispy.
If you like crispier taco shells, spray the pasta edges lightly with oil before air frying. That tiny trick makes a huge difference.
Once your air fryer taco stuffed shells are done cooking, carefully remove them from the air fryer basket using tongs or a spatula. Let them cool for 3 minutes and serve with your favorite toppings such as diced tomatoes, avocado slices, sour cream, or hot sauce. I chose to dip them in my favorite Homemade Chipotle Mayo. These stuffed shells make for a delicious and satisfying meal that is perfect for busy weeknights or casual gatherings with friends and family.
