1 pound ground sausage
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
1/4 cup chopped onion
1/4 cup chopped celery
1 teaspoon garlic powder
1 teaspoon dried sage
1/2 teaspoon salt
1/2 teaspoon black pepper
2 large eggs, beaten
2 tablespoons olive oil
Directions
Preheat your oven to 375°F (190°C).
In a large skillet, cook the ground sausage over medium heat until browned and fully cooked. Drain any excess fat.
In a large mixing bowl, combine the cooked sausage, breadcrumbs, Parmesan cheese, parsley, onion, celery, garlic powder, sage, salt, and pepper.
Add the beaten eggs to the mixture and stir until everything is well combined.
Using your hands, form the mixture into small balls, about the size of a golf ball.
Place the sausage balls on a baking sheet lined with parchment paper.
Brush the tops of the sausage balls with olive oil to help them crisp up.
Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and crispy.
Allow them to cool slightly before serving.
