Pepper Steak in a Crock Pot — melt-in-your-mouth beef strips slow-cooked with bell peppers in a savory garlic-soy sauce. A takeout favorite made easy!
Ingredients:
• 2 lbs beef sirloin or flank steak, thinly sliced
• 1 green bell pepper, sliced
• 1 red bell pepper, sliced
• 1 onion, sliced
• 3 cloves garlic, minced
• ¼ cup low-sodium soy sauce
• 2 tbsp brown sugar
• 1 tbsp cornstarch + 2 tbsp water (for thickening)
• 1 tsp ground ginger (optional)
• Salt & pepper to taste
• Cooked rice, for serving

Add beef, peppers, onion, and garlic to crock pot.
In a bowl, whisk together soy sauce, brown sugar, and ginger. Pour over beef.
Cover and cook on LOW for 5–6 hours or HIGH for 2.5–3 hours, until beef is tender.
Stir in cornstarch slurry during the last 30 minutes to thicken the sauce.
Serve hot over rice.
