Pan-Seared Mediterranean Cod in Tomato Basil Sauce

Ingredients:
4 cod fillets (about 6 oz each)

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 ½ cups cherry tomatoes (halved)

½ cup canned crushed tomatoes

¼ cup vegetable or chicken broth

1 teaspoon dried oregano

½ teaspoon red chili flakes (optional for spice)

Salt and pepper, to taste

¼ cup fresh basil leaves, chopped (plus extra for garnish)

1 tablespoon lemon juice

1 teaspoon balsamic vinegar (optional for depth of flavor)
