Instructions
Cook the Pasta
Preheat oven to 375°F (190°C). Cook the penne in salted boiling water until al dente, then drain and set aside.
Sauté Onion & Garlic
Heat olive oil in a large skillet over medium heat. Add the onion and garlic, cooking 3–5 minutes until softened and fragrant.
Brown the Sausage
Add the Italian sausage to the skillet and cook until browned, breaking it into crumbles. Drain excess grease and set aside.
Assemble the Casserole
Lightly grease a 9×13-inch baking dish. Spread a thin layer of pizza sauce on the bottom. Layer half the pasta, half the sausage, half the mozzarella, and half the pepperoni. Repeat with remaining ingredients, finishing with pepperoni and mozzarella on top.
Bake
Cover with foil and bake for 25 minutes. Remove the foil and bake an additional 10 minutes, until the cheese is melted and bubbly and the pepperoni edges are crisp.
Finish & Serve
Sprinkle Parmesan and dried oregano over the top. Let cool a few minutes before serving.
