Preparation method:
Peel and cut the potatoes, broccoli, carrots and onion into small pieces.
In a bowl, mix the vegetable pieces with the olive oil.
In another bowl, combine the cornstarch, herbs, garlic powder, pepper, and salt. Sprinkle this mixture over the vegetables and stir well to coat.
Place the vegetables on a baking sheet, cover with aluminum foil and place in a preheated oven at 200°C.
Bake for about 30 to 40 minutes, until tender and cooked to your liking.
If you want to make it in a pan:
Heat a pan over high heat for 30 seconds, then lower to medium-low heat.
Distribute the vegetables evenly in the pan, cover, and cook for 15 to 20 minutes.
After this time, turn the vegetables over and cook for another 15 to 20 minutes, until tender.
Roasted vegetables are great as a side dish or even as a main course.
