Grilled Chicken Salad with Avocado Guacamole
Ingredients:
For the Grilled Chicken:
2 boneless, skinless chicken breasts
1 teaspoon paprika
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper (optional)
Salt and black pepper to taste
1 tablespoon olive oil
For the Avocado Guacamole:
2 ripe avocados
1/4 cup finely chopped red onion (or green onion)
1 tablespoon lemon or lime juice
1 tablespoon chopped cilantro (optional)
Salt and black pepper to taste
A few chili flakes for garnish (optional)
For the Salad:
4 cups mixed lettuce or mixed green leaves
1 cup sweet corn (canned or frozen, thawed)
1 cucumber, sliced ​​or halved
1 cup cherry tomatoes, halved
Directions:
Prepare the Grilled Chicken:
Season the chicken breasts with paprika, cumin, cayenne pepper, salt, and black pepper. Heat olive oil in a grill pan or grill over medium-high heat.
Grill the chicken for 5-7 minutes per side, or until cooked through and the chicken shows grill marks.
Let it rest for a few minutes, then slice it into strips.
Prepare the guacamole:
Mash the avocado in a large bowl.
Add the chopped onion, lemon or lime juice, and cilantro (if using).
Season with salt and pepper and mix well.
Assemble the salad:
In a large bowl or individual plates, arrange the lettuce leaves or mixed greens as a base.
