1. Prepare the frikkadel:
In a large bowl, mix the minced meat with the chopped onion, egg, breadcrumbs, milk (or water), salt, pepper, and chopped parsley (if using).
Knead the ingredients well until combined. Shape the mixture into medium-sized patties or balls.
Heat the oil in a frying pan over medium heat.
Fry the frikkadel patties until golden brown on all sides and cooked through.
2. Prepare the roasted potatoes:
Preheat the oven to 200°C.
In a bowl, mix the potato pieces with the olive oil, salt, black pepper, and dried herbs.
Spread the potatoes on a baking tray in a single layer.
Roast the potatoes in the oven for 25-35 minutes, or until tender and golden brown, turning once or twice during roasting.
3. Serve:
Arrange the frikkadel and roasted potatoes on a serving platter.
Garnish with chopped fresh parsley and serve hot.
