2. In a skillet over medium heat, cook ground beef and onion until browned. Drain excess fat.

4. Stir in 2โ3 tablespoons of enchilada sauce to the beef mixture, then remove from heat.
5. Soften tortillas in a warm pan with a little oil or microwave briefly.
6. Spoon beef mixture into each tortilla, add a sprinkle of cheese, and roll tightly.
7. Place rolled enchiladas seam-side down in the baking dish.
8. Pour remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
