Diabetic-Friendly Low-Sugar Japanese Milk Brioche Rolls

These milk brioche–style rolls are pillowy, lightly sweet, and perfect for Christmas or any holiday breakfast. They use a sugar substitute and reduced butter to keep calories and carbs lower than traditional brioche, while still achieving the signature soft Japanese texture.

INGREDIENTS (Makes 9 rolls)
Dry Ingredients

2 ½ cups (300 g) bread flour

1 tsp salt

2 tbsp granular sweetener (erythritol or monk fruit)

Wet Ingredients
1 cup (240 ml) warm skim milk

1 ½ tbsp unsalted butter (softened)

1 ½ tsp instant yeast

Optional (for golden top)

1 tbsp milk for brushing
