Cottage Cheese Pancake Muffin Bites

Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
In a large mixing bowl, combine the cottage cheese, eggs, flour, sugar, baking powder, vanilla extract, and salt.
Mix the ingredients together until well combined and the batter is smooth.
Spoon the batter evenly into the prepared muffin tin, filling each cup about three-quarters full.
Bake in the preheated oven for 15-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Remove from the oven and allow to cool slightly before transferring the muffins to a wire rack.
Serve warm, or store in an airtight container for up to 3 days.
