1. Cut the cucumber into 4- to 6-inch lengths, and then cut each piece lengthwise into 14-inch-thick slices.
2. In a medium mixing bowl, combine the cream cheese, bell pepper, dill, chives, and pepper and stir to mix well.

3. Lay the cucumber slices on your work surface, and spread the cream cheese mixture on each to cover in an even layer. Top half of the slices with a turkey slice and then one of the remaining cheese-coated slices. Serve immediately, or cover and refrigerate until you’re ready to serve it.

Just because you’re eating a low-carb diet, you can’t be expected to give up on the entire sandwich concept. Sandwiches are easy, convenient and, let’s face it, so tasty that they’re hard to quit. The recipe below makes the perfect low-carb version using crisp slices of cucumber as the “bread.”
This “sandwich” makes an easy lunch or a satisfying snack. You can use any herbs or seasonings you like in the cream cheese mixture. And, of course, you can change up the deli meat. Another combination I love is a horseradish cream cheese with slices of deli-sliced roast beef.
